Last Night's iCUSU Formal Hall

Last night, we hosted a Formal Hall for iCUSU, the international arm of the Cambridge University Student Union. Their mission statement reads:

'CUSU International is a part of CUSU (The Student Union) at Cambridge University. Within CUSU we are an autonomous (independent and self-running) campaign. Our objective is to represent international students.

We have the following aims:

•To provide information to assist international students applying to Cambridge
•To provide support services for international freshers when they first arrive.

•To provide academic and welfare support to current students.
•To organise social events open to both international and home students.
•To promote diversity and cultural understanding.
•To act as a focus for international societies and groups within the university.'
This is the third year(?) ina row that Pembroke has hosted this event, with last night's dinner was attended by 150 students. The dinner began with an amuse bouche of Pea and Coconut Veloute, topped with a coconut foam (shown above and below from the Pembroke kitchens).
Following the amuse bouche, we served a smoked fish terrine with soda bread, lemon and tartare sauce.
Next came free-range chicken with mango puree, olive sauce, wilted spinach and champ potato.
The meal ended with carrot cake, cream cheese frosting, cinnamon ice cream and carrot powder!
Bon Appétit!
