1347 Committee Parents' Lunch Sunday 19th April

The 1347 Parents’ Lunch is an opportunity for parents of current students to enjoy the experience of dining at Pembroke, while supporting the 1347 Committee Student Hardship Fund.  Since the 1347 Committee was established in 1995, these lunches have raised over £100,000 to help students facing financial difficulty.  This year’s guest speaker was Jonathan Lynn (1961), Hollywood director and writer of ‘Yes, Minister’ and ‘Yes, Prime Minister’.

This year's Parents' lunch for 190 guests began with a chilled cucumber and prawn verrine, topped with caviar and garnished with dill. Vegetarian guests were served ratatouille in Sauternes gelee. Both of these recipes came from Terrines and Verrines by Franck Pontais.

Following the starter, we served a main course of fillet steak with white asparagus, spinach risotto and spring onions. The steaks were cooked sous vide to 58 C and the accompanying asparagus cooked sous vide to 85 C. The sous vide cooking method ensures perfectly cooked food, full of flavour and with a very tender finish. Vegetarian guests were served spinach, asparagus and wild mushroom risotto with Parmesan cheese and aubergine fritters.

For dessert we served a raspberry and mint mille-feuille garnished with raspberry sauce and fresh fruit.
