On Thursday evening, we hosted the farewell dinner for the Nihon University High School students and staff. On Friday, the Nihon group returned to Japan, marking the end of this year's Easter school.
The farewell dinner began with baked salmon, topped with a gremolata crust and served with rocket sauce and aioli. Gremolata is a mix of garlic, parsley and lemon zest, mixed with fresh breadcrumbs and spread over the top of the salmon.
Following on we served:
Roasted Supreme of Free-Range Chicken, Pea and spinach risotto with Parmesan cheese and a red pepper reduction
For the sweet we served:
Coconut Panna Cotta with mango puree and lime sorbet
