Last Night's Formal Hall Thursday 27th May

Wikipedia describes Gazpacho as, 'a cold Spanish tomato-based raw vegetable soup, originating in the southern region of Andalusia. Gazpacho is widely consumed throughout Spain, neighboring Portugal (where it is known as gaspacho) and parts of Latin America. Gazpacho is mostly consumed during the summer months, due to its refreshing qualities.'

Last night, we served gazpacho with the added twist of basil sorbet, an idea stolen from Tom Kitchin's book, From Nature to Plate. The sorbet tasted wonderfully fresh, and worked well with the chilled tomato and cucumber base of the gazpacho.
We followed the soup with a salmon fillet, confited in olive oil and acompanied by fennel, pea mousse and prawns. Salmon cooked this way takes on a wonderful flavour from the oil and have a unique texture thats difficult to describe in words alone!
Vegetarians were not left wanting with the lovely fennel, pea and tomato risotto.
The sweet consisted of pistachio and olive oil cake, served with roasted strawberries and rhubarb sorbet; another wonderful creation from the Pembroke kitchens!

  1. The soup was very nice and very refreshing indeed!

    I was wondering whether it would be possible to have an additional option for booking tickets. At the moment, there are options for vegetarians, vegans, cheese and biscuits, and allergies etc. Would it be possible to have an option normal meal with no fish and an option vegetarian with fish? A lot of people either don't eat fish or meat but do eat one of the two. Because the meat and vegetarian options already exist, there would be no extra course required, only a different combination of existing ones. I would favour that very much!

    I am just wondering when is the last formal of this term. I would really like to have a formal before I go off for the Long Vacation.

Paula, you don't need to have a 'special option' just for that...I know bc I'm in the same boat (don't eat meat but do eat fish)...all you have to do is tell them ahead of time and they can arrange it for you. there aren't enough of us to merit a whole other option haha. It's we who are picky, so we have to make the effort to tell them...
