Last Night's Formal Hall 20/10

At Pembroke, our menus contain recipes from some of the world's leading chefs. Take last night as an example, all three courses were chosen from Gordon Ramsay's Passion For Flavour.
We began last night's dinner with broccoli soup, topped with small goat's cheese and puff pastry croutes. This is a very simple soup that is enhanced by the addition of warm puff pastry and melted cheese.

 Following the soup, we served black bream with a pea, Parmesan and dill risotto. The fish was finished with a vanilla scented jus and roasted fennel. This is one of Gordon's favourite dishes and featured on his menu at Aubergine.
 For our vegetarian friends, we served butternut squash and Stilton quesadillas. Quesadillas are a Mexican dish made by filling flour tortillas with various ingredients, and then pan-frying until crisp. This recipe is not from Gordon Ramsey;-)
 For the sweet, we served a hot chocolate fondant with ginger ice cream and candied orange. The fondants are made by mixing Italian meringue with egg yolks, cocoa powder, melted chocolate, butter and flour.
As an extra course, we served dessert fruit, coffee and petit fours.
