The food was aMAZEing!
Last night's Formal Hall featured three wonderful recipes from the Maze cookbook by Jason Atherton. We began with marinated beetroot, goat's cheese, Swiss chard and beetroot dressing. The beetroot was marinated in Chardonnay vinegar, honey, thyme and sugar, before being topped with whipped goat's cheese, baton cut beets and the dressing.
For a main course we served lemon and garlic roasted free-range chicken with harissa-spiced couscous, roasted cherry tomatoes and pak choi. The chicken was simmered in a lemon syrup prior to being roasted through the oven with fresh thyme.
The finishing touch to this lovely meal came in the form of a infusion of summer berries with fromage frais and lime sorbet. The fresh berries were vacuum packed with the berry infusion (fresh berries with red wine, armagnac and sugar) and mint to intensify their flavour, prior to being topped with the refreshing sorbet.

I went to the swap last Thursday and really enjoyed the food, even more so since vegetarians were served at the same time as everyone else, which was a bit of a problem some other times, and because the vegan dessert was not the usual fruit salad, but rather a modified version of just what everyone else had, which didn't leave me feeling left out. The vegan and vegetarian main course option involved a meat substitute I did not recognise, so I looked at this website to find out what I had been eating. I was shocked when I discovered that Quorn contains egg white, which is not vegan at all. It will have passed through my body by now, so it's too late to do anything about it, but I would like to ask you to be more considerate towards people's dietary requirements - they can't do anything but trust you or stay at home - to avoid upsetting their feelings (or stomachs). Thank you.
ReplyDeleteAfter a quick investigation, it turns out that the chef responsible for the vegan food had been busy preparing the daily 12-item vegan tapas bar, and had not noticed the small print mentioning the powdered egg white. I've asked him to show more consideration in future.
