Ahhhhh, I am so behind schedule with updating the food blog! I took a day off on Friday and I'm still trying to catch-up!
On Thursday we started with a terrine and a verrine from Franck Pontais.
Smoked Mackerel and Trout Verrine
With saffron potato, green salad and lemon aioli
(V) Greek Salad á la Verrine
The recipe for the main course came from a newe addition to our library, The Clatter of Forks and Spoons by Richard Corrigan. We used rare-breed pork for this great dish.
Middle White Pork chops
With apricots, honey and sherry vinegar
With rocket salad and puree
The sweet was a real treat (:-) with an amazing tangerine sorbet; I tried some on Thursday and was blown away by how wonderful it tasted!
