The Pembroke College Chapel Choir Dinner Monday 17th May

Pembroke Chapel Choir is made up of an equal mix of graduates and undergraduates, largely from Pembroke, but with a welcome intake from other Colleges. The main service is Evensong on Sundays with occasional other services such as the Sung Eucharist each Term. Commitment to the Choir is kept at a minimum with just one practice on Wednesday evenings and another on Sunday afternoon before Evensong. The standard is nevertheless high (sight-reading skills essential), lifting up the worship of the congregation.
On Monday evening we hosted a dinner in the Old Library for our Chapel Choir. A menu befitting such a prestigious gathering was essential to the success of the evening, and being Pembroke catering, we always aim to please!

We began with marinated beetroot and goat's cheese, delicious!

Next came fresh salmon with a gremolata crust, rocket sauce and aioli.

For the main course we served slow-cooked rump of lamb sous vide with asparagus, spinach and crushed new potatoes.
Vegetarians enjoyed spinach tortellini
For the sweet we served mille feuille of raspberries and mint, sandwiched between sweet puff pastry and garnished with fondant.
